DURABILITY OF CEILING STRUCTURES OF BAKERY COOLING ROOMS

The durability of the structure and the arrangement of the well-known protective ceilings of the premises for cooling bakery products after baking were studied in order to increase the efficiency of repair and construction works and the longevity of operation. The main reasons for the short-term durability and unreliability of such ceilings, the main dependences of the technical and operational properties of the materials used for their installation have been established. The problematic aspects were identified and the used designs, materials, methods of installation and repair were analyzed, modern designs, materials and methods were summarized.
